Well, folks. I don’t think I have much to say about this recipe. I mean, it’s mashed potatoes. They are essential. Everyone has their own preference for how their mashed potatoes are made. Mine is a little lumpy, skins on, and gaahhh-licky. Sorry, that’s garlicky.
In a large bowl, add:
8 medium potatoes, cut into eighths and boiled until tender
1/2 c. shredded asiago or parmesan cheese
3/4 c. milk*
3/4 c. heavy cream
2 T. roasted garlic, or more
salt & pepper to taste
Now, just mash it all up together!
*If you save the milk that the garlic is roasted in, you can add it in place of some of the milk in this recipe. But you may want to add a little less roasted garlic if you do this.
